Chicken Cacciatore

One of my favorite meals.   This one is low calorie and delicious! 



Chicken Cacciatore

2 teaspoons Olive oil
4 - 4 oz.skinless chicken thighs
1 chopped onion
3 cloves of garlic, minced
3 cups sliced mushrooms
1 -14.5 oz can diced tomatoes, no salt added
1 green bell pepper, seeded and diced
1/4 cup tomato paste
1 teaspoon dried oregano
1/4 teaspoon freshly ground black pepper

In a large nonstick skillet, heat the oil  Add the chicken and brown 2 minutes on each side.  Transfer to a plate

In the same skillet, cook the onion and garlic, stirring as needed, until softened, about 5  minutes.

Add the mushrooms, tomatoes, bell pepper, tomato paste, oregano and black pepper; bring to a boil, stirring as needed.  Return the chicken to the skillet.  Reduce heat and simmer, uncovered, stirring as needed, until the chicken is cooked through, about 25  minutes.  

Serve on top or rice or pasta. Serves 4

Believe it or not,  each serving is 419 Calories and only 2 grams of saturated fat.
