Tuesday Recipe

HAPPY FALL EVERYONE!!

I have been so very anxious for to say this and for this time of year.
I love the colors of the leaves and the crisp fresh air.  With the cooler temperatures approaching I thought I would share a recipe that is a staple in our home.

Chicken Pot Pie 

Start with 1 whole Chicken Breast or 4 Thighs OR a combination of both.  It is your choice, depending on what your family likes.

Add enough water to cover the chicken,  add some salt and cook till done.  Remove the chicken and let cool.  Once cool enough to handle, pick the meat off the bones in bite sized pieces and set aside.

To the broth/liquid add 4 diced potatoes, 1 diced onion, salt and pepper to taste.  If needed add a bullion cube for additional flavor.  

Here comes the fun part......your going to make your own dough squares!!!!


You will need:

2 eggs - room temperature
1 Tablespoon Shortening
1 Teaspoon Baking Powder
1/2 Teaspoon Salt
1 1/2 Cup flour - more or less, use your judgement.

Mix the first 4 ingredients with a spoon.  Then add the flour until it is stiff enough to roll out to 1/8" thick.

Cut into 1" squares

Drop the squares into your broth, cook covered tightly an additional 20 minutes.  Add the chicken back and heat until it is warmed.


Finish off with some freshly chopped parsley.

Thats it!   



This is delicious served with with homemade crusty or garlic bread.
