Recipe Tuesday ~ DEVILISH BEEF STEW

Its 6:22AM here in NW New Jersey and it is still DARK outside!

I can hear the wind howling and when I turn the outside lights on I can see everything is wet.

Fall is definitely here!!!  The leaves have really started to show their beautiful colors and there are some trees, that are beginning to loose them as well.

Days like this I love to prepare a one pot dinner.  How about some..


DEVILISH BEEF STEW

1 1/2 pounds beef stew meat, cut in 1" squares
1/3 cup all purpose flour
2 tablespoons cooking oil
2 cups water
1 tablespoon dry mustard
1  teaspoon salt
1 clove garlic, minced
1 teaspoon chili powder
1 teaspoon worcestershire sauce
1/4 teaspoon pepper
4 medium potatoes, peeled and quartered
6 small onions, quartered
4 carrots, cut into 1" pieces
2 stalks celery, cut in 1" pieces
1/4 cup cold water

Coat beef cubes in flour and add 1/3 at a time to brown in hot oil, reserve remaining flour.   Remove pot from heat and add all the beef back into your pot and then add 2 cups water, mustard, salt, garlic, chili powder, worcestershire sauce and pepper.   Bring to boil and then simmer for 1 - 1 1/2 hours or until meat is almost tender.
Add the 1 1/2 cups water, potatoes, onions, carrots and celery.  Simmer covered about 30 minutes or until veggies are tender.
Blend 1/4 cup cold water into the reserved flour until smooth.  Slowly stir into hot liquid.  Cook and stir till thickened and bubbly.  Season to taste.


Serve with a loaf of Warm Crusty Bread
