Mushroom, Beef and Barley Soup

I woke up to the sound of the county truck applying road salt.  Yup, it is freezing rain here and not until this Nor'easter passes through Wednesday will we be rid of this mess.    Freezing rain, snow, high winds and.......ice....wonderful weather here in Northwestern New Jersey!

In anticipation of the weather I made a pot of soup and thought I would share the recipe with you.


Mushroom, Beef and Barley Soup
1/2 pound sirloin steak, cut into 1 1/2" pieces
2 Tablespoons olive oil
1 cup diced onion
1 cup diced carrot
1 12 ounce mushrooms, coarsely chopped
1/2 cup uncooked barley
1 can beef broth
5 cups water
1 teaspoon coarse salt
1/2 teaspoon freshly ground black pepper
bay leaf
worcestershire sauce

Heat oil in a large pot over medium heat.  Add beef and saute until brown.  Add onion and carrots; saute about 7 minutes.  Add mushrooms; cook, about 8 minutes.

Add barley, borth, water, salt, bay leaf, pepper, dash of worcestershire sauce; stir to combine.  Bring to boil; reduce heat and simmer until barley is tender.
