Todays recipe comes from Susan Smith of
Susan shares that she and her Mother modified the recipe slightly for use with an electric mixer, rather than cutting in the butter with forks in the "old days" :) Every time she makes these cookies, she thinks of her beloved grandmother, wearing her baking apron and making these cookies.
She states

Swedish Wedding Cakes
1/2 cup powdered sugar
1 cup butter, softened (do not substitute)
2 teaspoons vanilla
2 cups all purpose flour
1 cup very finely chopped pecans or almonds
1/4 teaspoon salt
Powdered sugar
Heat oven to 325°
In a large bowl mix 1/2 cup powdered sugar, butter and vanilla till light and fluffy.
Stir in the flour, nuts and salt, mixing till a dough forms.
Shape into 1" balls and place 1" apart on an ungreased cookie sheet.
Bake till set but not browned and immediately remove from the cookie sheets to a rack. Cool slightly and roll in powdered sugar. When completely cooled, roll again in the powdered sugar.
Susan says, the calories are worth it.
