Summer Salad

Good Morning!

Summer and all the picnics are fast approaching.  Whenever we are invited to a picnic I make sure I take something to add to the menu.   This salad had a colorful presentation and travels well.

FRESH BROCCOLI SALAD

I large head of broccoli, cut into bite sized pieces
1/2 cup diced red onion
1 cup raisins
1/2 cup celery
1 cup sunflower seeds
12 slices of bacon - crip

1 cup mayonnaise
2 tablespoons cider vinegar

Fry bacon until very crisp, place on paper towel to drain.   When cool enough, chop into pieces.

Add together broccoli, onion, raisins, celery, sunflower seeds and bacon, toss lightly.

In a small bowl, mix together the mayonnaise and cider vinegar, pour over other ingredients.
Gently toss together and refrigerate until ready to eat.
