Marinated cucumbers, Onions and Tomatoes



Fabulous way to use up all the cucumbers and tomatoes from your garden.

3 medium cucumbers - sliced 1/4" thick
1 medium onion, sliced and separated into rings
3 medium tomatoes, cut into wedges
1/2 cup vinegar
1/4 cup sugar
1 cup water
2 teaspoons salt
1 teaspoon coarse ground black pepper
1/4 cup oil
1 teaspoon chopped fresh mint

Combine all ingredients in a large bowl.
Toss well to mix


Refrigerate at least 2 hours before serving

  1. I used apple cider vinegar and stevia instead of regular vinegar and sugar because that is what I had and it came out great!

  5. Made it twice; my. Wife asked that I add less sugar. I didn't have any mint on hand. Let's see how it tastes second time, excited! Alexander

  7. I do one with tomatoes, onions and dill pickles all cut up and salt and mix . We love it!!

  8. I make this too, but I do not use oil at all. My mother never dead and she’s from the farm in Texas and I tell you there to makes a big difference and I don’t use quite as much water and I do use apple cider vinegar. Hines is the best people say there’s no difference, but there is trust me I cooked for years and years and years I’m 81 now and I will never fix it any different I tried it several times with the oil, and it always warmed up being dumped out. The oil separates from everything floats on top, so it ruins the cucumbers and onions.
