ZUCCHINI


YES  our long awaited Celebration is now running.   We are also having a TREASURE HUNT  for our customers.   There is a posting on this blog with information about it. 

While you are looking through our shops for the Treasure  Hunt, grab a cup of coffee or tea and munch on these fabulous muffins  !!  (recipe below)


My one single zucchini plant is producing overtime!   I am giving away zucchini and looking for  interesting recipes to try.   I will be making these today, something baked instead of a dinner side dish.



Dark Chocolate Zucchini Muffins

1 1/3 cup whole wheat flour
1 1/3 cup all purpose flour
3/4 cup sugar
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder
1/4 cup cocoa powder
1/2 tsp cinnamon
1/4 tsp nutmeg
3/4 cup milk
3/4 cup light olive oil (not extra virgin)
2 eggs
1 1/2 tsp vanilla
3 cups zucchini, shredded
1 1/2 cup dark chocolate chips

Preheat over to 3350 degrees.   Coat muffin tray with cooking spray.   Whisk together all dry ingredients and set aside.   In a separate bowl, whisk together the wet ingredients.   Add shredded zucchini to the wet ingredients and stir.   Slowly add dry ingredients to the wet ingredients until just combined, then add the chocolate chips.

Scoop the batter into prepared muffin trays, filling each cup to the top.   Bake in the oven for 18-20 minutes or until a tester inserted in the center comes out clean.
